My wrappers are tearing when they come out of the machine. What’s wrong?

The dough is either too dry or not rested enough. After kneading, cover the dough with a damp cloth and let it sit for 20 to 30 minutes. If it still tears, add a tiny bit more water or a few drops of oil while kneading. The dough should feel smooth and stretchy — not dry and crumbly. Also make sure you’re using the right dough ball weight — about 7 gm for this die.

Can I make dumplings and wontons too, or only momos?
